Pineapple is one fruit that is often combined with others in recipes. Because of its sweet and tangy properties, it is the perfect complement to almost all fruits. We have put together four of the best orange-pineapple recipes!

Orange Pineapple Rum Punch

As summer starts to wind down there are still a few weeks left to enjoy the warmth. What better way to do that than with a cocktail in your hand? This rum punch recipe is quick and easy to make and is sure to be a crowd-pleaser!

Ingredients

  • ½ ounce of Grenadine
  • 2 oz pineapple juice
  • 2 oz Orange Juice
  • 2 oz Rum of your choice
  • 2 dashes of bitters
  • Orange slices for garnish
  • Chestnut Hill Farms Perfect Pineapple chunks for garnish
  • Ice

Instructions

  1. In a cocktail shaker add 1/2 cup of ice, grenadine, Rum, pineapple juice, orange juice, and bitters.
  2. Secure the lid and shake vigorously for 30- 45 seconds.
  3. Strain into a glass filled with fresh ice, garnish with an orange slice, and Chestnut Hill Farms Perfect pineapple chunks.
  4. Serve immediately.

Pineapple-Mandarin Caribbean Salad

Take a trip to the tropics with this delicious salad. Grilled chicken paired with fresh Chestnut Hills Perfect Pineapple chunks and mandarin oranges makes for a bright salad that is delicious and nutritious.

Ingredients

  • 1 pound chicken breast cubed
  • 1 head of romaine lettuce chopped
  • 1 cup of Chestnut Hill Farms Perfect Pineapple diced
  • 1 cup of mandarin oranges rinsed and drained
  • 1 red pepper diced
  • 1 tablespoon of poppyseeds
  • 1 tablespoon of sesame seeds
  • ½ cup of tortilla strips

Marinade:

¼ cup of orange juice

2 tablespoons vinegar

2 tablespoons honey

¼ cup olive oil

¼ teaspoon salt

Instructions

  1. Prepare the marinade and pour over chicken. Place in the fridge for 30 minutes prior to grilling. Can be left in the fridge for up to four hours.
  2.  Once the chicken is done marinading, pre-heat stove to medium high heat. Place a pan on the stove and drizzle with olive oil. Remove the chicken and place in pan grilling on each side for about 6-8 minutes. Time for grilling may vary due to the thickness of the chicken.
  3. Once done remove from pan and allow chicken to rest for 5 minutes.
  4. While the chicken is resting, toss together lettuce with the mandarin oranges, Chestnut Hill Farms Perfect Pineapple chunks, and red pepper. Top with chicken, poppy seeds, and sesame seeds.
  5. Serve salad with your favorite dressing and enjoy.

Orange Pineapple Cake

This orange and pineapple cake is a simple recipe that starts with a boxed cake mix and ends with a light and refreshing summer treat. The fluffiness of the whipped topping on top will make your friends beg you for more.

Ingredients

For Cake

  • 1 box yellow cake mix
  • 1 can (11 oz) mandarin oranges (do not drain)
  • ½ cup of vegetable oil
  • ½ cup sour cream
  • 3 large eggs

Whipped Pineapple Frosting

Instructions

  1. Preheat oven to 350. Prepare baking dish and set aside.
  2. In a large mixing bowl combine cake mix, mandarin oranges with juice, oil, sour cream, and eggs. Mix together for 1-2 minutes until oranges are broken up and the ingredients are completely combined.
  3. Pour mix into pan. Bake for 25-30 minutes or until a toothpick can be inserted in and comes out clean.
  4. Set aside cake to cool. While cake is cooling place your pineapple chunks in a food processor. Pulse until the pineapple because crumbly.
  5. To prepare frosting, add heavy whipping cream, powdered sugar, crushed pineapple, and instant pudding into a mixing bowl. Mix the ingredients until stiff peaks form, should take about 5 minutes.
  6. Once cake is cooled, spread whipped frosting onto the cake. Serve cake right away for the best texture. Cake can be child for 4-6 hours before serving.
