This Pineapple Bread Pudding With Irish Whiskey Cream Sauce Is The Perfect St. Patty’s Day Irish dessert!

St. Patrick’s Day is the perfect day to celebrate Irish heritage with leprechaun decorations, dancing, music, green attire, and—oh yeah, pineapple bread pudding with an Irish whiskey cream sauce! This delectable dessert, despite its scrumptiously simple recipe, will taste like you’ve spent hours in the kitchen, but leave you plenty of time to toast a round (or two) of Guinness. The sweet pineapple chunks give this bread pudding a fruity and pleasurable surprise.

Irish Pineapples: Grown In The Land of Green

We won’t blame you if you’re thinking Ireland and Pineapples, a fruit indigenous to the Americas, shouldn’t mix.  But, did you know that pineapples actually grow in Ireland? It’s true (sort of)! Pineapples and other citrus thrive off humid, tropical climates and are unlikely to survive a cold, north Atlantic winter. However, after three long years, Noreen Handley of Ireland managed to grow a pineapple in her conservatory. You might not want to wait that long for your fruit, but whether you’re in Ireland or the United States you can pop over to your closest Aldi to pick up a perfect pineapple from Chestnut Hill Farms. 

The whiskey sauce is optional, though we recommend drizzling it on top to fully get into the St. Patty’s Day spirit. Let’s get started!

Irish Pineapple Bread Pudding Recipe

Prep Time: 10 minutes | Cook Time: 1 hour | Total: 1 hour and 10 minutes

Ingredients:

  • 2 ½ cups of chopped pineapple 
  • 4 cups bread cubes (French bread is recommended due to its softness and the crust isn’t too tough)
  • 1 ½ cups of sugar
  • 3 eggs beaten
  • 4 tablespoons of butter 1/2 stick, melted
  • 1 cup of milk

Instructions:

  1. Preheat the oven to 325 degrees F. Spray a large casserole dish (9×12 inches or 2.5 quarts) with nonstick coating and set aside.
  2. Cut bread into small cubes. Set aside.
  3. Mix melted butter and sugar together in a large mixing bowl; then add beaten eggs and milk.
  4. Add in the pineapple and stir to combine.
  5. Fold in bread cubes into the mixture slowly, being careful not to crush the bread.
  6. Pour the mixture into the prepared casserole dish.
  7. Bake at 325F for one hour or until the center is set.
  8. Top with brown sugar or cinnamon sugar (optional).
  9. Serve as a side dish or dessert. Enjoy!

Ingredients for Irish Whiskey Cream Sauce

St. Patrick’s Day wouldn’t be St. Patrick’s Day with a little mix of whiskey. Raise a glass to the Irish monks who first distilled this spirit in the 12th century with this Irish whiskey cream sauce oozing with warm, tasty, and easy flavor.

Prep Time: 5 minutes | Cook Time: 5 minutes | Total: 10 minutes

Ingredients:

  • 1 stick of butter that’s softened to room temperature
  • 1 cup of sugar
  • 6 tablespoons of heavy whipping cream
  • 1/4 cup of Irish whiskey (Jameson Recommended)
  • 1 tablespoon of butter flavoring

Instructions:

  1. In a small saucepan add 1 stick of butter, and place over low heat until melted.
  2. When butter has melted, add sugar, whipping cream & whiskey. Whisk together to blend. Then bring to a simmer, lower heat, and let simmer for about 5 minutes, till mixture becomes slightly thickened.

  4. Pour or drizzle sauce on top of your finished pineapple bread pudding to add Irish flare.
