It’s gonna be a tiki new year. Champagne toasts are great, but you know what really gets a party started? Tiki cocktails made with pineapple! Polynesia is one of the first places to ring in the New Year, so it only makes sense to bring some of the local flavors to your gathering. These sweet concoctions can transform any regular New Year’s Eve party into one your guests will be talking about for years to come.

With only a few core ingredients based around fresh pineapple juice, you can make a variety of cocktails that will get the party started in no time. These New Year’s Eve pineapple tiki cocktails are as easy as 1-2-3. Even a novice mixologist can spend less time behind the bar and more time counting down 3-2-1 as the clock strikes midnight.

Pineapple Prosecco Punch

All of your guests will be asking for refills on this classic Rum Punch that has been dressed up for New Year’s Eve. The key to this tasty New Year’s Eve pineapple tiki cocktail is a splash of prosecco. Keep the party light and bubbly with Pineapple Prosecco Punch!

What You’ll Need

2 ounces fresh Pineapple Juice

1 ounce freshly squeezed Orange Juice

1 ounce White Rum

Prosecco

1. Add the Pineapple Juice, Orange Juice, and White Rum to a Cocktail Shaker with Ice. Shake vigorously.

2. Pour into a Champagne Flute.

3. Top with Prosecco. Garnish with a slice of pineapple.

4. Enjoy!

Pineapple Daiquiri

If you’re stuck somewhere cold at this time of year, the taste of fresh pineapple to the traditional Daiquiri will get you dreaming about the year ahead. Make sure to shake hard when mixing this drink to get a lovely layer of foam on top of your glass. You’ll feel just like Papa Hemingway ringing in the New Year down in Old Key West.

What You’ll Need

2 ounces fresh Pineapple Juice

1 ounce freshly squeezed Lime Juice

4 ounces White Rum

1-ounce Simple Syrup

1. Add the Pineapple Juice, Lime Juice, and White Rum to a Cocktail Shaker with Ice. Shake vigorously.

2. Pour into a Coupe Glass.

3. Garnish with a slice of pineapple.

4. Enjoy!

Simple Syrup can be found at your local liquor store, but if you find yourself out in a pinch it is easy to make in your own kitchen. All you have to do is mix equal parts sugar and water in a saucepan over low heat. Remove from the heat once the sugar has dissolved and voila! 

New Year’s Day Breeze

This twist on a classic Bay Breeze is sure to ease that New Year’s Day dread. Whip up a batch of these beauties and everyone (and we mean everyone) will join in for the final chorus of Auld Lang Syne.

What You’ll Need

3 ounces fresh Pineapple Juice

3 ounces Cranberry Juice

2 ounces Vodka

1. Add the Cranberry Juice and Vodka to a Cocktail Shaker with Ice. Shake vigorously.

2. Pour into a Cocktail Glass.

3. Slowly pour the Pineapple Juice over the top to create a sunset gradient.

4. Garnish with a slice of pineapple.

4. Enjoy!

A Note on Glassware: Champagne Flutes are as iconic on New Year’s Eve as fireworks in Times Square. While none of these drinks require being served in a champagne flute, it adds festivity to the party! But, feel free to use whatever glassware you have handy or Tiki mugs if you got ‘em. Don’t be afraid to use plastic champagne flutes either, they can be picked up at any party supply store and make the after-party clean-up a cinch.
