Today, we’re dishing out some delicious Mother’s Day breakfast recipes featuring the one and only queen of fruits: pineapple! From waffles to smoothies and everything in between, we’ve got a bunch of fruit options that are sure to make your mom say, “you’re the zest!”

Pineapple Butter Waffles for Sweet Moms

One of the sweetest ways to start Mother’s Day is with breakfast in bed, double that if it’s waffles in bed! This Pineapple Butter recipe is a fun and easy way to elevate your favorite waffle mix or frozen waffles for a special occasion. Don’t forget to top your waffles with confectioners sugar and fresh fruit, like blueberries, strawberries or, of course, more pineapple!

A little warning: the butter takes about an hour to make, so you’ll want to plan accordingly or make it ahead of time!

Ingredients

1 ½ cups Chestnut Hill Farms Perfect Pineapple, diced

1 oz apple, diced

2 tbsp lemon juice, freshly squeezed

¼ pint water

1 ½ cups sugar

Ingredients

  1. Put the pineapple pieces, apple pieces, lemon juice and water into a saucepan.
  2. Place the lid on the pan and cook gently for 30-40 minutes. Stir frequently using a wooden spoon. The mixture is ready when the fruit has softened.
  3. Pour the mixture into a food processor or blender. Purée.
  4. Pour the purée into the pan and add the sugar. The amount of sugar should be adjusted as explained above. Cook over gentle heat, stirring frequently. Keep cooking until the sugar dissolves.
  5. Bring the mixture to a boil. Cook for about another 15-20 minutes while stirring occasionally. When the mixture is thick and creamy, remove from the heat and let stand for 5-10 minutes to cool slightly.
  6. Enjoy immediately, or place the pineapple butter in airtight containers and store in the refrigerator for up to one week.

Pineapple Sriracha Breakfast Bowls for Spicy Moms

This next recipe is for the moms that like a little extra spice in their life. Breakfast bowls are amazing because you can make them with whatever ingredients you have on hand; including pineapple is a refreshing and delicious way to elevate this morning meal. Apart from being a fantastic way to empty out the fridge, these pineapple breakfast bowls are a great recipe for kiddos to explore the kitchen. The rice can be made ahead of time and with just one egg needed, Mother’s Day is the perfect time to teach budding chefs how to fry an egg.

Ingredients

1 cup cooked rice

1 tsp soy sauce

Splash of sesame oil

1 tsp sriracha

⅓ cup Chestnut Hill Farms Perfect Pineapple, chopped

1 green onion, sliced

1 large egg

Salt and pepper

Instructions

  1. Reheat the cooked rice in the microwave, then season with soy sauce, sriracha, and a splash of sesame oil.
  2. Roughly chop the pineapple pieces and thinly slice the green onion. Stir them into the seasoned rice.
  3. Fry the egg, seasoning it with salt and pepper, and leaving the yolk slightly runny. Top the seasoned rice bowl with the egg and enjoy!

Ingredients

⅓ cup Chestnut Hill Farms Perfect Pineapple, chopped

¼ avocado

½ cup heavy cream

1 tbsp coconut flakes

½ cup ice

1 cup water

Instructions

  1. In a blender, add in pineapple, avocado, heavy cream, coconut flakes, ice and 1 cup of water.
  2. Next, blend until smooth.
  3. Pour into a glass, garnish with some toasted coconut flakes and enjoy!
